Ingredients

100ml Chardonnay vinegar
Pinch of sugar
1 Shallot

 
Cooking Instructions
  1. Finely dice the shallot and mix with the vinegar. Add a pinch of sugar to balance.
  2. Serve on freshly shucked diamond clams.
